1.5 lbs skinless, boneless chicken thighs, cubed
1 cup onions, cubed
1 tbsp olive oil

Vinaigrette Salad:
1 tbsp balsamic vinegar
1 tbsp olive oil
Pinch salt

1 lbs salmon fillet with skin

1 lb pork belly, thinly sliced
1 lb shrimp, peeled & deveined
1 cup yellow or white onion, sliced
1 cup bean sprouts
1/2 cup green onions, chopped
1/2 cup cilantro, chopped
1 bag Banh Xeo Ready Mix Flour (Mikko Huong Xua Brand)
4 cups water
1/2 cup green onions (optional for banh xeo mix)

Shrimp Spring Rolls

[serves 2]

1 cup Viet Kieu Sauce Vietnamese Dipping Sauce
6-8 medium-sized rice paper sheets (can also use lettuce as a wrap instead)
10 large shrimps, boiled, peeled, deveined & halved
1/2 small package of rice vermicelli noodles (about 6 oz.), cooked per instructions
1/2 large English cucumber, sliced 4 inches long
1/2 head green leaf lettuce
Amount and choice of herbs desired (cilantro, mint, coriander)
1 large bowl of warm water
